Zucchini and Cheese Slice (Oven-Baked Budget Lunch)

Ingredients

  • 3 medium zucchinis (500g/1 lb total), grated
  • 1 onion, finely diced
  • 1 cup (120g) self-raising flour (or plain flour + 2 tsp baking powder)
  • 4 large eggs, beaten
  • 1½ cups (150g) grated cheese (cheddar, mozzarella, or mix), divided
  • ¼ cup (60ml) vegetable oil or melted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: ½ cup diced ham, 1 grated carrot, or 2 tbsp fresh herbs

Instructions

  1. Prep Oven & Pan:
    Preheat oven to 180°C (350°F). Grease a 20x20cm (8×8-inch) baking pan or line with parchment paper.
  2. Prepare Zucchini:
    Grate zucchini, then squeeze firmly in a clean towel to remove excess liquid.
  3. Mix Ingredients:
    In a large bowl, combine squeezed zucchini, onion, eggs, oil, salt, and pepper. Add flour and 1 cup cheese. Mix until just combined (avoid overmixing). Fold in optional add-ins if using.
  4. Bake:
    Pour mixture into prepared pan. Sprinkle remaining ½ cup cheese on top. Bake for 35–40 minutes until golden and a skewer inserted comes out clean.
  5. Cool & Serve:
    Let rest 10 minutes before slicing. Serve warm or at room temperature.
