Ingredients
For the Oatmeal:
- ½ cup (50g) rolled oats (old-fashioned)
- 1 cup (240ml) vegetable broth (or water + ½ tsp soy sauce)
- Salt and black pepper to taste
For the Spinach & Egg:
- 1 tsp olive oil or butter (divided)
- 1 small garlic clove, minced
- 2 cups (60g) fresh spinach
- 1 large egg
- Pinch of red pepper flakes (optional)
Toppings (optional):
- Grated Parmesan or cheddar cheese
- Fresh herbs (chives, parsley)
- Everything bagel seasoning
Instructions
- Cook the oatmeal:
- In a small saucepan, bring vegetable broth to a boil.
- Add oats, reduce heat to medium-low, and simmer 5–7 minutes until creamy, stirring occasionally.
- Season with salt and pepper. Cover and set aside.
- Sauté the spinach:
- Heat ½ tsp oil in a nonstick skillet over medium heat.
- Add garlic and sauté 30 seconds until fragrant.
- Add spinach and cook 1–2 minutes until wilted. Season with salt, pepper, and red pepper flakes (if using). Transfer to a bowl.
- Fry the egg:
- In the same skillet, heat remaining ½ tsp oil.
- Crack in egg, season with salt and pepper, and cook 2–3 minutes until white is set but yolk is runny.
- Assemble:
- Pour oatmeal into a bowl. Top with spinach and fried egg.
- Sprinkle with cheese, herbs, or seasoning if desired.
