  • Asparagus: 2 bunches (24 oz total), tough ends trimmed
  • Butter: 6 tbsp, divided
  • Olive Oil: 2 tbsp
  • Garlic: 4 cloves, minced
  • Lemons: 2 (zest of both + 4 tbsp juice)
  • Fresh Parsley: ¼ cup, chopped
  • Salt and Black Pepper: To taste
  • Red Pepper Flakes: ½ tsp (optional)
  • Lemon Slices: For garnish

Instructions

  1. Sear the Cod:
    • Season cod generously with salt, pepper, and half the lemon zest.
    • Heat 2 tbsp butter and 2 tbsp olive oil in a large skillet over medium-high heat.
    • Add cod (work in batches if needed) and cook 3–4 minutes per side until golden. Transfer to a plate.
  2. Sauté Asparagus:
    • In the same skillet, add 2 tbsp butter.
    • Add asparagus, season with salt, and sauté 5–6 minutes until tender-crisp. Push to one side.
  3. Make Lemon Butter Sauce:
    • Reduce heat to medium. Add remaining 2 tbsp butter, garlic, and red pepper flakes (if using). Sauté 30 seconds until fragrant.
    • Stir in lemon juice and scrape up any browned bits.
  4. Combine and Finish:
    • Return cod to skillet, nestling into asparagus. Spoon sauce over cod.
    • Sprinkle with remaining lemon zest and parsley.
    • Garnish with lemon slices and extra parsley. Serve immediately.
