Ingredients

  • Chia Base:
    • ½ cup (80g) chia seeds
    • 2 cups (480ml) unsweetened almond milk (or coconut milk)
  • Chocolate Mixture:
    • 4 tbsp unsweetened cocoa powder
    • 2 tsp vanilla extract
    • ¼ tsp salt
  • Optional Add-ins:
    • 2-4 tbsp heavy cream or coconut cream
    • 1 tsp cinnamon or espresso powder
  • Toppings (Optional):
    • Crushed nuts (pecans/almonds)
    • Unsweetened coconut flakes
    • Cacao nibs

Instructions

  1. Whisk Wet Ingredients:
    In a large bowl, combine almond milk, cocoa powder, vanilla, salt, and heavy cream (if using). Whisk vigorously until cocoa dissolves completely.
  2. Add Chia Seeds:
    Immediately stir in chia seeds. Mix thoroughly to prevent clumping.
  3. Rest and Thicken:
    Let mixture sit 5 minutes, then stir again. Cover and refrigerate at least 4 hours (or overnight) until pudding-like.
