Serves: 4
Prep Time: 10 minutes
Cook Time: 4 hours (HIGH) or 6 hours (LOW)

- 8 chicken drumsticks (about 2 lbs, skin-on or skinless)
- ½ cup low-sodium soy sauce
- ⅓ cup honey
- 3 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp sesame oil

- 1 tbsp fresh ginger, grated
- 1 tsp black pepper
- ½ tsp red pepper flakes (optional, for heat)
- 1 tbsp cornstarch
- 2 tbsp cold water
- Sesame seeds and sliced green onions (for garnish)
Instructions
- Prep the Chicken:
- Pat drumsticks dry with paper towels. Trim excess skin if desired.
- Make the Sauce:
- In a bowl, whisk soy sauce, honey, vinegar, sesame oil, garlic, ginger, black pepper, and red pepper flakes (if using).
- Slow Cook:

- HIGH: 4 hours
- LOW: 6 hours
- Chicken is done when tender and pulls easily from the bone.

- Mix cornstarch and cold water until smooth. Whisk into sauce.
- Simmer over medium heat 3–5 minutes, stirring, until thickened.

- Return drumsticks to slow cooker. Pour thickened sauce over them, turning to coat.
- Cover and warm for 10 minutes.
- Garnish with sesame seeds and green onions.
