Slow Cooker Honey Soy Chicken Drumsticks

Imagine tender chicken drumsticks bathed in a seductively glossy glaze of honey, soy, and ginger, falling effortlessly off the bone.

Serves: 4
Prep Time: 10 minutes
Cook Time: 4 hours (HIGH) or 6 hours (LOW)

Ingredients

  • 8 chicken drumsticks (about 2 lbs, skin-on or skinless)
  • ½ cup low-sodium soy sauce
  • ⅓ cup honey
  • 3 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Sesame seeds and sliced green onions (for garnish)

Instructions

  1. Prep the Chicken:
    • Pat drumsticks dry with paper towels. Trim excess skin if desired.
  2. Make the Sauce:
    • In a bowl, whisk soy sauce, honey, vinegar, sesame oil, garlic, ginger, black pepper, and red pepper flakes (if using).
  3. Slow Cook:
    • Place drumsticks in the slow cooker. Pour sauce evenly over chicken.
    • Cover and cook:
      • HIGH: 4 hours
      • LOW: 6 hours
    • Chicken is done when tender and pulls easily from the bone.
  4. Thicken the Sauce:
    • Transfer cooked drumsticks to a plate.
    • Skim excess fat from the sauce. Pour sauce into a saucepan.
    • Mix cornstarch and cold water until smooth. Whisk into sauce.
    • Simmer over medium heat 3–5 minutes, stirring, until thickened.
  5. Glaze & Finish:
    • Return drumsticks to slow cooker. Pour thickened sauce over them, turning to coat.
    • Cover and warm for 10 minutes.
    • Garnish with sesame seeds and green onions.
