Microwave Oatmeal Mug Cake (No Banana)

Ingredients

  • ¼ cup (25g) rolled oats (quick oats work too)
  • 1 tbsp (7g) all-purpose flour (or oat flour for gluten-free)
  • 1 tbsp (10g) brown sugar or maple syrup
  • ¼ tsp baking powder
  • Pinch of sea salt
  • ¼ tsp ground cinnamon (optional)
  • 3 tbsp (45ml) milk (dairy or plant-based)
  • 1 tbsp (15ml) neutral oil or melted butter
  • ½ tsp vanilla extract
  • 1 large egg (essential binder)
  • Optional mix-ins: 1 tbsp chocolate chips/raisins

Instructions

  1. Mix Dry Ingredients:
    In a 12oz+ microwave-safe mug, whisk oats, flour, sugar, baking powder, salt, and cinnamon.
  2. Combine Wet Ingredients:
    Add milk, oil, vanilla, and egg. Vigorously mix with a fork until just combined (small lumps are okay).
  3. Add Mix-ins (Optional):
    Gently fold in chocolate chips or raisins.
  4. Microwave:
    Cook uncovered on HIGH for 1 minute 30 seconds. Check doneness (top should be set but slightly moist). If needed, microwave in 10-second bursts (max 2 min 30 sec total). Caution: Mug will be hot!
  5. Rest and Serve:
    Let stand 1–2 minutes before eating. Top with nut butter if desired.
