Ingredients
Chicken Skewers:
1.5 lbs (680g) boneless chicken thighs, cut into 1-inch strips
2 tbsp coconut oil, melted
1 tbsp soy sauce
1 tsp garlic powder
1 tsp ground ginger
1 tsp turmeric
½ tsp cumin
Salt and pepper to taste
Optional: 1 tbsp lime juice
Peanut Sauce:
½ cup natural sugar-free peanut butter
⅓ cup full-fat coconut milk
1 tbsp soy sauce
1 tbsp lime juice
1 clove garlic, minced
1 tsp grated ginger
1 tsp chili paste (e.g., sambal oelek)
1–2 tsp keto sweetener (optional)
2–3 tbsp water (as needed)
Garnish (optional):
Chopped cilantro
Crushed peanuts
Lime wedges
Instructions
- Marinate Chicken:
In a bowl, mix coconut oil, soy sauce, garlic powder, ginger, turmeric, cumin, salt, pepper, and lime juice (if using). Add chicken strips and coat thoroughly. Refrigerate for 30–60 minutes. - Prepare Peanut Sauce:
Whisk all sauce ingredients except water in a saucepan over low heat until smooth (3–4 minutes). Add water 1 tbsp at a time until desired consistency. Set aside. - Skewer Chicken:
Thread marinated chicken onto soaked wooden or metal skewers. - Grill Skewers:
Preheat grill/grill pan to medium-high. Cook skewers 3–4 minutes per side until charred and internal temperature reaches 165°F (74°C). - Serve:
