Keto Chicken Satay Skewers with Peanut Sauce

Ingredients

Chicken Skewers:
1.5 lbs (680g) boneless chicken thighs, cut into 1-inch strips
2 tbsp coconut oil, melted
1 tbsp soy sauce
1 tsp garlic powder
1 tsp ground ginger
1 tsp turmeric
½ tsp cumin
Salt and pepper to taste
Optional: 1 tbsp lime juice

Peanut Sauce:
½ cup natural sugar-free peanut butter
⅓ cup full-fat coconut milk
1 tbsp soy sauce
1 tbsp lime juice
1 clove garlic, minced
1 tsp grated ginger
1 tsp chili paste (e.g., sambal oelek)
1–2 tsp keto sweetener (optional)
2–3 tbsp water (as needed)

Garnish (optional):
Chopped cilantro
Crushed peanuts
Lime wedges


Instructions

  1. Marinate Chicken:
    In a bowl, mix coconut oil, soy sauce, garlic powder, ginger, turmeric, cumin, salt, pepper, and lime juice (if using). Add chicken strips and coat thoroughly. Refrigerate for 30–60 minutes.
  2. Prepare Peanut Sauce:
    Whisk all sauce ingredients except water in a saucepan over low heat until smooth (3–4 minutes). Add water 1 tbsp at a time until desired consistency. Set aside.
  3. Skewer Chicken:
    Thread marinated chicken onto soaked wooden or metal skewers.
  4. Grill Skewers:
    Preheat grill/grill pan to medium-high. Cook skewers 3–4 minutes per side until charred and internal temperature reaches 165°F (74°C).
  5. Serve:
    Arrange skewers with peanut sauce for dipping. Garnish with cilantro, peanuts, and lime wedges.
