Ingredients:
- 1.5 lbs (680g) ground beef (80/20 recommended)
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 cup sugar-free dill pickles, chopped (plus extra for garnish)
- 1 cup heavy cream
- 8 oz (225g) cream cheese, softened
- 2 tbsp tomato paste (sugar-free)
- 1 tbsp yellow mustard
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- 1.5 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 slices cooked bacon, crumbled (optional)
- Salt and pepper to taste
- Fresh parsley (garnish)
Instructions:
- Preheat & Prep:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook Beef Mixture:
- In a skillet over medium heat, brown ground beef with onion and garlic until no pink remains. Drain excess fat.
- Stir in pickles, tomato paste, mustard, Worcestershire sauce, paprika, salt, and pepper. Cook 2 minutes.
- Make Cheese Sauce:
- Reduce heat to low. Add cream cheese and heavy cream, stirring until smooth and bubbly (3–4 minutes).
- Remove from heat; fold in ½ cup cheddar and ½ cup mozzarella until melted.
- Assemble & Bake:
- Transfer the beef mixture to the baking dish. Top with remaining cheddar and mozzarella.
- Bake 20–25 minutes until cheese is golden and bubbly.
- Garnish with bacon, extra pickles, and parsley.
- Serve:
- Let cool 5 minutes. Pair with a side salad or keto-friendly coleslaw.
Tips:
- Lower Carbs: Omit onion or reduce to ¼ cup.
- Add Veggies: Stir in 1 cup cauliflower rice with the beef.
