Keto Cauliflower Pizza Bites

Ditch the carb heavy delivery and whip up these irresistible Keto Cauliflower Pizza Bites in just 25 minutes.

Ingredients

(Makes 12 bites)
For the Base:
4 cups riced cauliflower (1 medium head, stems removed)
1.5 cups shredded mozzarella cheese, divided
¼ cup grated Parmesan cheese
1 large egg
1 tsp dried oregano
½ tsp garlic powder
¼ tsp sea salt
¼ tsp black pepper

For Toppings:
⅓ cup sugar-free pizza sauce
½ cup mini pepperoni slices
Optional: Sliced olives, mushrooms, or fresh basil


Instructions

Step 1: Prep Cauliflower

  1. Rice cauliflower florets in a food processor until fine.
  2. Microwave riced cauliflower for 5 minutes. Cool slightly, then wrap in a kitchen towel and squeeze out all liquid (critical for crispiness).

Step 2: Make Dough
3. In a bowl, combine:

  • Drained cauliflower
  • 1 cup mozzarella
  • Parmesan, egg, oregano, garlic powder, salt, and pepper.
  1. Mix until dough-like.

Step 3: Shape Crusts
5. Preheat oven to 400°F (200°C). Grease a muffin tin.
6. Press 2 tbsp mixture into each cup, forming a well in the center.

Step 4: Bake Crusts
7. Bake 15–18 minutes until golden. Pat down puffed centers with a spoon.

Step 5: Add Toppings
8. Spread 1 tsp sauce in each cup.
9. Top with remaining ½ cup mozzarella, pepperoni, and optional toppings.

Step 6: Final Bake
10. Bake 5–7 minutes until cheese melts. Cool 5 minutes before removing.


Traybake Variation

  • Step 3 (Alt): Line a baking sheet with parchment. Spread dough into a ½-inch thick rectangle (8×12″).
  • Step 4 (Alt): Bake crust 20–25 minutes.
  • Step 5 (Alt): Spread sauce, cheese, and toppings evenly.
  • Step 6 (Alt): Bake 8–10 minutes. Slice into 12 squares.
