Ingredients

For the Base:
4 cups riced cauliflower (1 medium head, stems removed)
1.5 cups shredded mozzarella cheese, divided
¼ cup grated Parmesan cheese
1 large egg
1 tsp dried oregano
½ tsp garlic powder
¼ tsp sea salt
¼ tsp black pepper
For Toppings:
⅓ cup sugar-free pizza sauce
½ cup mini pepperoni slices
Optional: Sliced olives, mushrooms, or fresh basil
Instructions
Step 1: Prep Cauliflower
- Rice cauliflower florets in a food processor until fine.
- Microwave riced cauliflower for 5 minutes. Cool slightly, then wrap in a kitchen towel and squeeze out all liquid (critical for crispiness).
Step 2: Make Dough
3. In a bowl, combine:
- Drained cauliflower
- 1 cup mozzarella
- Parmesan, egg, oregano, garlic powder, salt, and pepper.
- Mix until dough-like.
Step 3: Shape Crusts
5. Preheat oven to 400°F (200°C). Grease a muffin tin.
6. Press 2 tbsp mixture into each cup, forming a well in the center.
