Keto Beef, Cabbage & Bell Pepper Skillet

Servings: 4 | Prep Time: 10 mins | Cook Time: 20 mins

Ingredients:

  • 1 lb ground beef
  • ½ medium onion, diced
  • 1 bell pepper (any color), diced
  • 3 cups green cabbage, shredded
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • ½ tsp cumin (optional)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional for heat)
  • 1 tbsp soy sauce
  • Fresh parsley or green onions (garnish)
  • Optional: Shredded cheese (cheddar, pepper jack)

Instructions:

1. Sauté Aromatics & Bell Peppers

  • Heat oil/butter in a large skillet over medium heat.
  • Add onions and bell peppers, sauté for 3-4 mins until slightly softened.
  • Stir in garlic and cook for 30 seconds until fragrant.

2. Brown the Beef

  • Add ground beef, breaking it apart. Cook until no pink remains (~5-6 mins).
  • Drain excess fat if desired (or leave for extra richness).

3. Season & Spice

  • Sprinkle paprika, cumin, salt, black pepper, and red pepper flakes over the beef.
  • Pour in soy sauce and mix well.

4. Add Cabbage

  • Toss in shredded cabbage, stir to combine.
  • Cover and cook for 5-7 mins, stirring occasionally, until cabbage is tender but still slightly crisp.

5. Garnish & Serve

  • Taste and adjust seasoning if needed.
  • Top with fresh parsley/green onions (and cheese if using).
