Ingredients

  • 1 large head cauliflower (cut into bite-sized florets)
  • 8 oz (225g) block feta cheese
  • 1 pint (300g) cherry tomatoes
  • 1/2 cup Kalamata olives (pitted)
  • 4 cloves garlic (minced)
  • 1/4 cup extra-virgin olive oil (plus extra for drizzling)
  • 1 tsp dried oregano (plus extra for sprinkling)
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley (chopped, for garnish)
  • 2 boneless chicken breasts (cubed)

Instructions

  • Prep Vegetables and Oven:
    • Preheat oven to 400°F (200°C).
    • In a large bowl, toss cauliflower, tomatoes, olives, and garlic with olive oil, oregano, smoked paprika, red pepper flakes, salt, and pepper.
  • Assemble Tray:
    • Spread vegetable mixture evenly on a parchment-lined baking sheet.
    • Place whole feta block in center. Drizzle with olive oil and sprinkle with extra oregano and black pepper.
