Ingredients
- 1 large head cauliflower (cut into bite-sized florets)
- 8 oz (225g) block feta cheese
- 1 pint (300g) cherry tomatoes
- 1/2 cup Kalamata olives (pitted)
- 4 cloves garlic (minced)
- 1/4 cup extra-virgin olive oil (plus extra for drizzling)
- 1 tsp dried oregano (plus extra for sprinkling)
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil or parsley (chopped, for garnish)
- 2 boneless chicken breasts (cubed)
Instructions
- Prep Vegetables and Oven:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss cauliflower, tomatoes, olives, and garlic with olive oil, oregano, smoked paprika, red pepper flakes, salt, and pepper.
- Assemble Tray:
- Spread vegetable mixture evenly on a parchment-lined baking sheet.
- Place whole feta block in center. Drizzle with olive oil and sprinkle with extra oregano and black pepper.
