Herb-Crusted Slow-Roasted Pork Shoulder

Ingredients:

  • 1 (4-5 lb) fresh pork shoulder (hand of pork)
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 1 cup chicken broth
  • 4 cloves garlic, smashed
  • 2 tbsp apple cider vinegar (optional, for acidity)

Instructions:

1. Prep the Pork:

  • Pat the pork dry with paper towels. If it has skin, score it with a sharp knife in a crosshatch pattern.
  • In a bowl, mix salt, pepper, paprika, garlic powder, rosemary, thyme, and onion powder. Rub the spice mix generously over the pork.

2. Sear (Optional):

  • Heat oil in a large skillet over medium-high. Sear the pork on all sides until browned (3-4 minutes per side). This enhances flavor.

3. Slow Roast:

  • Preheat oven to 300°F (150°C). Place the pork in a roasting pan fat-side up. Add garlic cloves and broth to the pan. Pour apple cider vinegar over the pork.
  • Cover tightly with a foil and roast for 4 hours. Uncover, increase heat to 425°F (220°C), and roast 30-40 minutes to crisp the exterior. Internal Temp should reach 195-205°F for tenderness.
