Savoury Oatmeal with Fried Egg and Spinach

Ingredients

For the Oatmeal:

  • ½ cup (50g) rolled oats (old-fashioned)
  • 1 cup (240ml) vegetable broth (or water + ½ tsp soy sauce)
  • Salt and black pepper to taste

For the Spinach & Egg:

  • 1 tsp olive oil or butter (divided)
  • 1 small garlic clove, minced
  • 2 cups (60g) fresh spinach
  • 1 large egg
  • Pinch of red pepper flakes (optional)

Toppings (optional):

  • Grated Parmesan or cheddar cheese
  • Fresh herbs (chives, parsley)
  • Everything bagel seasoning

Instructions

  1. Cook the oatmeal:
    • In a small saucepan, bring vegetable broth to a boil.
    • Add oats, reduce heat to medium-low, and simmer 5–7 minutes until creamy, stirring occasionally.
    • Season with salt and pepper. Cover and set aside.
  2. Sauté the spinach:
    • Heat ½ tsp oil in a nonstick skillet over medium heat.
    • Add garlic and sauté 30 seconds until fragrant.
    • Add spinach and cook 1–2 minutes until wilted. Season with salt, pepper, and red pepper flakes (if using). Transfer to a bowl.
  3. Fry the egg:
    • In the same skillet, heat remaining ½ tsp oil.
    • Crack in egg, season with salt and pepper, and cook 2–3 minutes until white is set but yolk is runny.
  4. Assemble:
    • Pour oatmeal into a bowl. Top with spinach and fried egg.
    • Sprinkle with cheese, herbs, or seasoning if desired.
