Keto Cheeseburger Casserole

A low-carb, high-fat twist on classic cheeseburger flavors. easy, cheesy, and ready in under an hour!

Ingredients:

  • 1.5 lbs (680g) ground beef (80/20 recommended)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup sugar-free dill pickles, chopped (plus extra for garnish)
  • 1 cup heavy cream
  • 8 oz (225g) cream cheese, softened
  • 2 tbsp tomato paste (sugar-free)
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 slices cooked bacon, crumbled (optional)
  • Salt and pepper to taste
  • Fresh parsley (garnish)

Instructions:

  1. Preheat & Prep:
    • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook Beef Mixture:
    • In a skillet over medium heat, brown ground beef with onion and garlic until no pink remains. Drain excess fat.
    • Stir in pickles, tomato paste, mustard, Worcestershire sauce, paprika, salt, and pepper. Cook 2 minutes.
  3. Make Cheese Sauce:
    • Reduce heat to low. Add cream cheese and heavy cream, stirring until smooth and bubbly (3–4 minutes).
    • Remove from heat; fold in ½ cup cheddar and ½ cup mozzarella until melted.
  4. Assemble & Bake:
    • Transfer the beef mixture to the baking dish. Top with remaining cheddar and mozzarella.
    • Bake 20–25 minutes until cheese is golden and bubbly.
    • Garnish with bacon, extra pickles, and parsley.
  5. Serve:
    • Let cool 5 minutes. Pair with a side salad or keto-friendly coleslaw.

Tips:

  • Lower Carbs: Omit onion or reduce to ¼ cup.
  • Add Veggies: Stir in 1 cup cauliflower rice with the beef.
  • Storage: Refrigerate up to 4 days or freeze for 1 month.
