3-Ingredient Peanut Butter Cookie Recipe (No Flour)

Ingredients

  • 1 cup (250g) creamy peanut butter (conventional, not natural/oily)
  • 1 cup (200g) granulated sugar (white or light brown)
  • 1 large egg

Instructions

  1. Prepare Dough:
    • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a bowl, combine peanut butter, sugar, and egg. Stir until smooth and thick (1–2 minutes).
    • Optional: Chill dough 10 minutes if too soft.
  2. Shape Cookies:
    • Roll dough into 1-inch balls (1 tbsp each). Place 2 inches apart on baking sheet.
    • Flatten each ball with a fork in a criss-cross pattern (dip fork in sugar to prevent sticking).
  3. Bake:
    • Bake 10–12 minutes until edges are golden (cookies will firm while cooling).
    • Remove from oven (do not overbake).
  4. Cool:
    • Let rest on baking sheet 5 minutes, then transfer to wire rack to cool completely.
