Keto Taco Bowls (No Shells)

Savory seasoned beef simmers in smoky spices, piled high over fluffy cauliflower rice, then loaded with cool lettuce, creamy avocado, melted cheese, and zesty toppings.

Ingredients

  • 1 lb (450g) ground beef
  • 2 tbsp olive oil or avocado oil, divided
  • ½ cup (60g) onion, finely diced (optional)
  • 3 garlic cloves, minced
  • 3 tbsp keto taco seasoning (see notes)
  • ¼ cup (60ml) beef broth
  • 1 large head of cauliflower (or 1 lb/450g pre-riced)
  • ½ tsp cumin
  • ½ tsp chilli powder
  • Salt and pepper to taste
  • 1 cup (70g) shredded lettuce
  • ½ cup (90g) diced tomatoes
  • ½ cup (60g) shredded cheddar cheese
  • 1 medium avocado, sliced
  • ¼ cup (60g) sour cream
  • ¼ cup fresh cilantro, chopped
  • Optional: jalapeños, lime wedges, sugar-free salsa

Instructions

  1. Prepare Cauliflower Rice:
    Pulse cauliflower florets in a food processor until rice-like. Heat 1 tbsp oil in a skillet over medium-high heat. Add cauliflower, cumin, chilli powder, salt, and pepper. Sauté 5-8 minutes until tender-crisp. Transfer to bowl.
  2. Cook Taco Meat:
    In the same skillet, heat 1 tbsp oil over medium. Sauté onion (if using) 3-4 minutes until soft. Add garlic; cook 30 seconds until fragrant. Increase heat to medium-high. Add ground beef; break apart and brown 5-7 minutes. Drain excess fat if desired.
  3. Season Meat:
    Sprinkle taco seasoning over the beef. Stir to coat. Pour in beef broth. Simmer 3-5 minutes until the liquid reduces, season with salt and pepper.
  4. Assemble Bowls:
    Divide cauliflower rice among bowls. Top with taco meat. Add lettuce, tomatoes, cheese, avocado, sour cream, cilantro, and optional toppings.

Keto Taco Seasoning (yields 3 tbsp):

  • 1 tbsp chili powder
  • 1½ tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes
  • ¼ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
    (Mix all ingredients)
