Ingredients
- 1 lb (450g) ground beef
- 2 tbsp olive oil or avocado oil, divided
- ½ cup (60g) onion, finely diced (optional)
- 3 garlic cloves, minced
- 3 tbsp keto taco seasoning (see notes)
- ¼ cup (60ml) beef broth
- 1 large head of cauliflower (or 1 lb/450g pre-riced)
- ½ tsp cumin
- ½ tsp chilli powder
- Salt and pepper to taste
- 1 cup (70g) shredded lettuce
- ½ cup (90g) diced tomatoes
- ½ cup (60g) shredded cheddar cheese
- 1 medium avocado, sliced
- ¼ cup (60g) sour cream
- ¼ cup fresh cilantro, chopped
- Optional: jalapeños, lime wedges, sugar-free salsa
Instructions
- Prepare Cauliflower Rice:
Pulse cauliflower florets in a food processor until rice-like. Heat 1 tbsp oil in a skillet over medium-high heat. Add cauliflower, cumin, chilli powder, salt, and pepper. Sauté 5-8 minutes until tender-crisp. Transfer to bowl. - Cook Taco Meat:
In the same skillet, heat 1 tbsp oil over medium. Sauté onion (if using) 3-4 minutes until soft. Add garlic; cook 30 seconds until fragrant. Increase heat to medium-high. Add ground beef; break apart and brown 5-7 minutes. Drain excess fat if desired. - Season Meat:
Sprinkle taco seasoning over the beef. Stir to coat. Pour in beef broth. Simmer 3-5 minutes until the liquid reduces, season with salt and pepper. - Assemble Bowls:
Divide cauliflower rice among bowls. Top with taco meat. Add lettuce, tomatoes, cheese, avocado, sour cream, cilantro, and optional toppings.
Keto Taco Seasoning (yields 3 tbsp):
- 1 tbsp chili powder
- 1½ tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp red pepper flakes
- ¼ tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
